Time to prepare: 20 min; Difficulty: Medium
- 1 cup cashew pieces/1 cup cashew meal
- 2 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 10 drops liquid stevia (I used English Toffee flavor, you could also sub a teaspoon of maple syrup or local raw honey, or a packet of powdered stevia)

- Optional: chocolate chips
- Olive oil or coconut oil for greasing griddle
Preheat griddle or skillet over medium heat (on the lesser side of medium) and grease. Take all the ingredients besides additional oil and blend them in a blender.
